Professional blast chiller
The professional blast chiller for Ho.Re.Ca sector is an important appliance in a professional kitchen. Its main use is to cool food in a short time by rapidly lowering its temperature. The professional blast chiller can lower the temperature from 150 degrees to below 40 degrees in about 90 minutes.
These professional blast chillers are specialised in food, they have different settings that can be used according to the differents needs (environmental temperature, cold or warm).
What kind of professional blast chillers exist?
Professional blast chillers are available in various sizes to suit any type of activity.
Professional blast chillers have a configuration that can hold 3, 5, 7, 10 and 15 trays. The most common are the professional 3 trays blast chiller like the RF 23A, the professional 5 trays blast chiller like the RF 50A and finally the professional 10 trays blast chiller like the RF 100A.
These professional blast chiller models are all equipped with the natural refrigerant gas R290. In addition, they are equipped with the latest digital thermostats, and optionally allow the temperature and humidity of the appliance to be controlled by Wi-Fi connection.
Professional blast chillers dedicated to fish or ice-cream
The blast chiller can be used with different types of food, such as fish or ice cream.
For example, the temperature for chilling fish must be strictly controlled to avoid the presence of bacteria in raw fish.
With regard to the preservation of ice cream, these professional blast chillers are equipped with the ‘frost bust’ system, a cycle at -40°C, and another special cycle for ice cream, which already takes into account the temperatures at which it must be to avoid melting or spoiling.
